How To...."Cook up a Great Team"

Forget every day cooking classes! Cheeky Food Group creates unforgettable EVENTS & PARTIES with fun, music, cooking and vino - to suit your objectives, mission statement or conference theme.

Our "mission" is to create a warm and relaxed 'party' atmosphere to encourage talking, laughter and bonding within your group as you create your very own restaurant and 'whip up' a magnificent feast to eat and enjoy together. Now there's a reward!

Creating your Own Restaurant - How it all Works

The "Surprise" Start For most teams it's a surprise to discover they're about to create their own restaurant! So we give everyone a couple of canapés, then we'll explain how the cook-up will progress. Following a few quick safety issues, we'll deliver the analogies between your work environment and a restaurant, then liven up the event with some music.

The Big Cook-Up The group will be placed in teams with each team enjoying the benefit of their own experienced chef/cook who'll encourage them to get involved in preparing dishes to create a magnificent buffet. You'll learn how to chop, fry, sizzle, flambé, bbq and bake.

Bring on the Wait Staff! Having finished as the chefs, you'll now become the wait staff as you create an "Italian Long Lunch" style table setting. One and all become involved in putting out tea lights, intricate napkin folding, adding flowers...whatever they choose from their surroundings.

The big REWARD....now you're the customers! Now you can relax, sit, eat and enjoy the magnificent feast you've created together. You'll be amazed and rewarded with your delicious banquet.

Your Glam MENU The food is delicious and could include Flambéed Greek Prawns with Feta & Ouzo, Mediterranean Lamb or Moroccan Chicken Tagine. Or try the Wicked Chocolate Brownies with Kahlua Mascarpone! Or maybe Corn & Jalapeno Muffins with Honeyed Butter for a brunch!

Unlike many 'high five' activities, everyone is a 'winner' and 'secret ingredient' to the group's success. Male, female - younger or older - sports fan or lounge lover - everyone becomes a Celebrity Chef and cooks up a storm. Move over Jamie!!

And of course, the focus is on YOU, not their chefs or the food. With minimal demonstration (but lots of friendly supervision)...you'll get straight into the action!

A Taste of the Mirage - Lamb Rogan Josh - Serves 6

Preparation time:
10 minutes

Total cooking time:
3 hours

Ingredients
600g - 700g chopped leg of lamb
2 cloves chopped garlic
40g chopped ginger
2 teaspoons salt
1 teaspoon tumeric
3 teaspoon garam masala
2 teaspoon ground coriander
2 teaspoon ground cumin
2 dessert spoons plain yoghurt
1 teaspoon red chilli powder
2 medium onions finely chopped
¾ tin (810g) peeled and chopped tomatoes

Method

This is a no fuss method involving just one pot and your skill as a stirrer of a wooden spoon!

First, heat some vegetable oil on high heat until very hot.

Stir fry onions until soft then add garlic, ginger and spices. This mixture should be dryish.

When the heavenly aroma fills your kitchen, add the lamb and fry until meat is fully browned. Stir on a highish heat. Add tomatoes, stir well then add dollops of yoghurt, stirring continuously until boiling.

Cover and simmer on a low temperature for a total of 2.5 hours, stirring at 30 minute intervals. You will notice the mixture becomes thicker and the colour becomes red/brown.

At this point it is done!

Season to taste

Sprinkle with chopped coriander and allow to rest for 5 minutes before serving.

This dish is best served in bowls with Naan, rice and a side of chunky cucumber, tomato, onion and carrot with a dash of lemon or vinegar. Very, very tasty and easy to make!
