HOW TO.......sit correctly at your desk!!
By Debbie Mayo-Smith - Best selling author and sought-after international speaker.
The 'Simply Massage' Simple Workstation Checks - How are you sitting right now?
Seat height
Check the elbow and knee angles in the diagram! Adjust seat height so feet are flat on the floor, knees are bent at right angles and thighs are parallel to the floor or tilted slightly forward. If the keyboard surface is then too high and cannot be adjusted (ie your elbow is not bent at a right angle), adjust the height of your chair and use a footrest so that you get the correct angle at the knee and the forearm.
Backrest
Adjust backrest (vertically) so it supports the lumbar curve of the lower back. Adjust backrest (horizontally) so there is a couple of fingers’ space between the front edge of seat and the backs of your knees.
Seat tilt (if applicable)
Adjust seat tilt so that your hips and the tops of your thighs are at right angles (or slightly greater). Not all chairs have a tilt adjustment - this is OK as long as you can maintain a right angle between your thighs and hips.
Armrest position
Armrests are not recommended for keyboard work but may provide support during other activities (eg. telephone use, meetings, etc.).
Sitting posture
An upright or slightly reclined posture is recommended – ensure the backrest supports your lower back.

A TASTE OF THE MIRAGE - Baklava
Last month we gave you a healthy salad, this time, a very unhealthy, but oh so yummy, Baklava!!
Preparation time: 20 mins
Total cooking time: 1 hour 10 minutes
Serves: 20
Ingredients
750g Fillo Pastry (2 packets of 375)
2 cups chopped walnuts
500g unsalted butter
½ cup sugar
Cinnamon & cloves to taste
Method
Melt butter and lightly grease 25x43cm baking tray. Trim pastry to size of tray. Layer one packet of pastry, brushing with butter after every second or third sheet of pastry.
Combine chopped walnuts, sugar, cinnamon, and cloves to taste. Sprinkle evenly over top layer. Continue to layer the remaining pastry.
Cut into diamond or square shapes, making sure to cut right through to the base.
Pour the remaining butter (if any) over the Baklava, and it will be absorbed by the pastry. Bake in moderate oven for at least one hour or until golden brown. Let cool and pour hot syrup over cold Baklava.
Syrup
2 cups water
2 cups sugar
½ cup honey
1 teaspoon lemon juice
Few pieces of lemon rind
